Recipe

Makes 2 glasses

  • 2 cups watermelon deseeded
  • 1 cup ice cubes
  • 1 tsp honey (optional)
  • 300ml coconut water
  • 1 cup ice cubes
  • 2 or 3 fresh mint leaves
  • Blend and enjoy

Nutrition

Coconut water is different to coconut milk. Whilst coconut milk is made by grinding the coconut meat and is high in fat and calories, coconut water is the clear juice from the centre of the nut and low in fat. It contains high levels of potassium which helps to reduce fluid retention and personally I find it very helpful for reducing the swelling around my always puffy ankles. Potassium  is also essential to keep our blood pressure from rising too high and therefore prevents heart attack and stroke.

Coconut water is the perfect way to rehydrate on a hot day or after intense exercise as it contains electrolytes and simple sugars. It is natures own Gatorade, without the added sugar, crazy blue food colouring and flavours.

We really enjoy the flavour of coconut water, it is very crisp, clean and tropical. We also make a delicious pork dish where we poach chicken in the coconut water. Now that’s a blog for next time…

    What a delicious looking drink. I tried coconut water when I was visiting Noosa recently and was not that into it. I think I may give it another go with this watermelon recipe.
