One thing The Chef has taught me over the years, is how to cook using the least amount of time possible.

What I like to do is cook a large batch of one ingredient then use this across the next few days in lunches and dinners.

Here, I show you how baking 1 batch of pumpkin can create four delicious dishes

What to do:

Wash and Peel 1 or 2kg of pumpkin and cut into cubes.

If you are not planning to make the cake, throw in onion and garlic on the same tray. If you are planning to make the tray, simply separate the pumpkin from the onion and garlic and roast on separate trays.

Nutrition:

Pumpkin is full of fibre. It contains high amounts of beta carotene which gets converted in our body to Vitamin A, the antioxidant essential for our immune system, anti ageing, eyesight as well as healthy skin, hair and nails. It also contains Vitamins C and E, Folate and the heart-healthy mineral – potassium.
