These delicious ice pops are dairy and refined sugar free and packed full of yum.
They are truly the taste of an Australian summer.

You don’t need to stick to a strict recipe. Experiment with different flavour combos as you wish

Mango, Coconut and Macadamia Pops

Deliciously refreshing, these pops use all natural ingredients to create a healthy Weiss bar
Ingredients
  • Approx 2 mangoes
  • Approx 1 can coconut cream
  • Handful of macadamia nuts (optional)
  • Honey or maple syrup to taste
  • Ice cream/Ice block moulds or you could use Styrofoam cups
  • Paddle pop sticks (if you don’t use these you can simply use a tea spoon)
Instructions
  1. Peel mango and blend until smooth
  2. Spoon pureed mango into the bottom of the ice block moulds
  3. Place moulds in freezer and freeze until mango has set enough to pour coconut mixture on top of
  4. Blend coconut cream and honey/maple syrup together in blender
  5. Add the macadamia nuts to the mixture and pulse the blender to chop the macadamia nuts slightly
  6. Pour the creamy mixture onto the mango mixture in the moulds
  7. Take a paddle pop stick and place into the centre of each mould
  8. Push down into the semi frozen mango mixture to hold it in place
  9. Return to freezer and freeze until mixture is set

Tip: If you have any mixture left over, freeze it and pop it into your smoothie the next day

“Do remember, coconut cream is high in fat and calories, so if you are aiming to lose weight this will need to be considered when chomping on these and  like anything, should be eaten in moderation. If your diet is already within your caloric requirements, these ice pops are fabulous as a healthy snack
