Baked Chocolate Custard – Dairy and Gluten Free
Preheat oven to 150 degrees (fan forced)
3 eggs whisked
2/3 cup coconut milk
2 tbsp brown sugar or honey
4 tbsp cocoa
1 banana sliced (optional)
Add the coconut milk and sugar to the bowl of whisked eggs and whisk until combined
Add the cocoa and continue whisking until fully combined and no lumps are visible
If using banana, slice and lay in the bottom of 2 x oven proof ramekins
Pour custard into ramekins
Bake for 35 minutes until custard is set
This is a great dessert for those who are dairy and gluten intolerant. Remember, it contains coconut milk and sugar which means it is still a dessert, consider it a delicious treat. Enjoy!
