This is the dish I remember from my childhood. Mum used to make these for dinner and they were my favourite. The zucchini sweetens at it roasts and then adding salty, gooey, delicious cheese on top just makes it the most simple, yet delicious way to have veggies.

Zucchini is a great source of fibre and vitamin C. It also contains manganese, copper and magnesium

  • Zucchini
  • Cheddar Cheese/Tasty Cheese
  • Olive oil
  • Dried herbs
  1. Preheat the oven to 180 degrees Celsius
  2. Wash the zucchini and slice lengthways into thirds
  3. Place on a baking tray lined with baking paper
  4. Drizzle the zucchini with a little olive oil
  5. Sprinkle with dried herbs
  6. Place the zucchini in the oven and roast for 20 minutes
  7. Meanwhile, slice the cheese thinly
  8. After 20 minutes, remove the zucchini from the oven and top with the sliced cheese. How much cheese you use is up to you
  9. Place the zucchini back in the oven for another 2 minutes, or until the cheese is melted and golden
