Trying to cut back on your sugar intake? No problem, just omit the maple syrup! 

Apart from sweet potato being packed full of nutrition, it’s a versatile staple ingredient that can be used across many cuisines and dishes.

Our Tip: Save time in the kitchen by roasting a huge batch of this recipe to use as a side dish then divide it up to be used in the following recipes over the coming days:

 Roast chicken with a side serve of sweet potato and greens

INGREDIENTS

Sweet Potato (washed and unpeeled)
Real Maple Syrup (optional)
Salt

Sesame Seeds

Method:

Preheat the oven to 180 degrees Celsius
Line a large baking tray with grease proof paper or a small amount of oil to prevent the potato from sticking to the tray
Chop the potato into medium sized pieces (it really doesn’t matter what size). If you are in a rush chop the potato into small pieces and it will cook faster
Bake in the oven for approximately 30 minutes or until you can pierce the potato easily right through with a knife
When cooked, drizzle the potato with maple syrup and a sprinkle of sesame seeds and salt and return to the oven for 5 minutes to caramelise.

NUTRITION
Sesame seeds are an excellent source of copper and manganese. They are also an excellent source of magnesium, calcium, phosphorous and zinc, as well as fibre. They add a delicious nutty flavour to the dish with a crunch.

Sweet potatoes are a slow release carbohydrate making them an excellent source of energy to get you through a busy day. High in fibre they are also a fabulous source of vitamin A for healthy hair,skin and nails and fighting free radicals and potassium for a healthy heart.
